Strawberry muffins


Ingredients:

Canola oil: 1/2 cup
Milk: 1 cup
Eggs: 2
Salt: 1 teaspoon salt
Baking Pwd: 4 teaspoons
Sugar: 1 cup
All purpose flour: 3 1/2 cups
Chopped strawberries: 2 cups


Method:

Preheat oven to 375 degrees F, oil an 8 cup muffin tin, or use paper liners.
In a small bowl, combine oil, milk, and egg. Beat untill well mixed.
In another bowl, mix flour, salt, baking powder and sugar. Now toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.
Fill muffin cups. Bake for 25 minutes, or until the tooth pick inserted comes out clean.

Cool 10 minutes and remove from pans.

I baked them for a get together and the kids loved them a lot.

Contest Winning Strawberry banana pie

For crust:

All purpose flour: 11/2 cup
Sugar: 2 tsp
Salt: 1 tsp
Milk: 2 tbsp
Oil: 1/2 cup

For filling:

Strawberries: 4 cups chopped
Condensed milk: 1 tin (14 oz)
Bananas: 2 rippen (Chopped in circles)

Method:

For crust:

Pre heat oven to 350 Degrees.
Mix all the above ingredients to form a dough.
Grease the pie pan and spread the dough in the pie pan evenly.
Put the pie pan in the oven for about 15 minutes or untill the edges turn golden brown.
Remove from oven and let cool.

For filling:

Mix the chopped strawberries with condensed milk just before you use it to fill the pie.

Method for pie:

Take the pie crust and spread the banana slices in the pie. Now fill the strawberry condensed milk mix on top of the banana slices.
Decorate using your imagination.

I used melted chocolate to decorate along with some fresh strawberries.

Mango Ice cream

Ingredients:

Kesar Mango pulp: 1 tin
Pineapple chuncks: 1 tin
Condensed milk: 1 tin
Whipped cream: 3 pack




Method:

Mix all the above ingredients and whisk them or blend them untill everything gets mixed up well.
I used smoothie maker to mix them all.
Pour the ingredients in a freezer bowl and freeze overnight.

Yummy mango icecream is ready.

Easy Oatmeal Muffins

Ingredients:

Milk : 2 cups
Quick cooking oats: 2 cups
Eggs: 2
Oil: 1/2 cup
All purpose flour: 2 cups
Sugar: 1/2 cup
Baking powder: 1 tbsp and 1 tsp
Salt: 1 tsp

Substitute for Egg:

Baking powder: 1 tsp
Vinegar: 1 tbsp
Water: 1 tbsp

This measurment is only for one egg if you are using more than one egg then just double the ingredients depending on the number of eggs you are using.

Mix the 3 ingredients in a seperate bowl and then add them to the other ingredients.

Note: The baking powder used in the ingredients list should also be added along with the egg substiture ingredients.


Method:

Preheat oven to 425 degress. Grease muffin cups or line with paper muffin liners.
In a small bowl, combine milk and oats; let soak for 15 minutes.
In a seperate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are 2/3 full.
Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean

Ice Cream Cake

Ingredients:

Vanilla Ice cream: 1/2 pound box
Oreo Cookies: 12
Butter: 2 tbsps
Whip cream: 1 small box (8oz)
Sparkles: for decoration

Method:

In a zip loc bag add the oreo's and crush them with a rolling pin and mix with butter.
Let the ice cream and whip cream become little soft for spreading.
Now take the vessel you want to make the cake and spread the crushed oreo's as the first layer.
Now on top of the oreo's spread the ice cream and then the whip cream.
On the very top add the sprinkles and cover the vessel or pan with aluminium foli.
Now put it in the freezer and let it cool for at least 4-5 hours or over night.
