Rasmalai


Ingredients:

Paneer grated: 2 cups
Milk Powder: 4 tbsps
Sugar: 3/4 cup ( Make into fine powder)
Evaporated Milk: 2 tins
Elachi pwd: 1/2 tbsp
Vanilla essence: 1/2 tbsp


Method:

Take paneer, milk powder, 1/2 cup of powdered sugar and knead untill soft.
Put the mixture on the heat and stir continously for about 10 minutes.
Remove from heat and let cool.
Preheat oven to 350 degrees. Take a oven safe bowl and grease it with oil or ghee. spread the paneer mixture evenly in the pan and put it in the oven.
Bake untill you see the sides of the mixture turns lightly brown. Takes about 15 to 20 minutes.
(Don't let the mixute turn completelly brown).
Remove from oven and let it cool. Now cut the mixture into pieces.
Take the evaporated milk into another bowl and add the remaining sugar to the evaporated milk and mix well. Add elachi powder and vanilla essence. Finally add the pieces of panner and refrigerate for atleast an hour.
Serve cold.

Seshu Birthday Cake


Milk pedas


Ingredients:

Condensed Milk: 1 tin (14 oz)
Milk : 14 oz
Lemon Juice: 2 tbsps
Ghee: 1 tbsp
Corn flour: 1 tbsp
Elachi pwd: 1/4 tbsp
Yellow food color: Few drops (optional)

Method:

Take a heavy bottomed pan.
Add ghee to the pan following by condensed milk and milk.
Then add the Lemon juice to it and keep stirring untill the milk gets curdled. Takes at around 5 minutes.
Make a paste of the corn flour by adding little water to it.
Add the corn flour paste to the curdled milk and stir continously untill the mixture gets thickend. Add a few drops of yellow food color to it and stir.
At last add elachi pwd and remove from heat.
Let it cool and make into desired shapes.
Enjoy.

Snack Mixture

Ingredients:

Corn flakes cereal: 1 box (18 oz)
Rice Crips cereal: 1/2 box (9 oz)
Fried channa dhal: 1 cup (8oz)

For Seasoning:

Mustard seeds: 1 tbsp (Avalu)
Cumin seeds: 1 tbsp
channa dhal: 2 tbsps
Urad dhal: 2 tbsps
Curry leaves: 10 leaves
Red chillies: 4
Oil: 5 tbsp
Red chillie pwd: 1 tbsp
Salt: to taste
Cumin pwd: 1 tbsp
Garlic crushed: 3 cloves

Method:

Take a frying pan and add heat oil in it.
Now add the seasoning ingredients one by one and fry until the dhals are golden brown.
Remove from heat and add the rice crisp cereal to it and mix well.
Now take the container you want to store the mixture and dump the whole box of corn flakes in the container.
Now add the fried channa dhal and mix well.
Finally add the rice crisps mixed with seasoning the the corn flakes and mix well.
Store in air tight container.

Very tasty snack to eat it as a snack at tea time.

My kids lot this a lot.

Ice Cream Cake

Ingredients:

Vanilla Ice cream: 1/2 pound box
Oreo Cookies: 12
Butter: 2 tbsps
Whip cream: 1 small box (8oz)
Sparkles: for decoration

Method:

In a zip loc bag add the oreo's and crush them with a rolling pin and mix with butter.
Let the ice cream and whip cream become little soft for spreading.
Now take the vessel you want to make the cake and spread the crushed oreo's as the first layer.
Now on top of the oreo's spread the ice cream and then the whip cream.
On the very top add the sprinkles and cover the vessel or pan with aluminium foli.
Now put it in the freezer and let it cool for at least 4-5 hours or over night.

Instant Rava Idli

Ingredients:

Sooji : 1 cup
Yogurt: 1 cup
Water : 1/2 cup
Salt : to taste
Baking soda: A pinch


Method:

Roast the sooji untill golden brown without oil.
Let it cool and add the remaining ingredients.
Grease the idli moulds with oil or water.
Add the batter to the moulds and pressure cook just like idlis for 20 minutes or until done.
Remove from heat and wait for 5 minutes before removing from the moulds. 

You can also add grated carrots and tomatoes to the batter.

These idlis tastes great with ginger chutney or coconut chutney.

Wheat dosa



Ingredients:

Wheat flour: 3/4 th cup
Rice flour: 1/4 th cup
Salt : to taste
Cumin seeds: 1/2 tbsp
water: as needed
Oil

Method:

Mix all the above ingredients except water into thin batter like dosa batter.

Heat the dosa pan.
Take the batter with a small glass and pour the batter on the pan.
Add oil to the dosa and let it fry till golden brown.
It takes some time to fry this dosa.

You can add onion, grated carrot on top of the dosa while frying.

Enjoy with coconut chutney.
