Egg Pakodi

Ingredients:

Eggs: 4 (Boiled, peeled and cut into 4 long strips)
Besan: 1/4 cup
Rice flour: 2 tbps
Salt: to taste
Pepper pwd: 1 tsp
Red chilli pwd: 1/4 tsp
Oil: For deep frying.


Method:

Mix all the ingredients except eggs and oil, just like bajji batter and keep aside for 15 minutes.
Now heat oil in a pan for deep frying. Dip each egg strip in the batter and deep fry in the oil until golden brown.

Delicious egg pakodi are ready to eat.

Tastes very good with ketchup.

Sanaga Pappu Pakam

Ingredients:

Fried channa dhal: 2 cups
Jaggery 2 cups
Elachi pwd: 1/4 tsp
Water: 1/4th cup

Method:

In a heavy bottomed vessel add jaggery and water and keep stirring on medium heat until one string consistency.
Add elachi pwd and remove from heat. Slowly add channa dhal and mix well.
Spread it on a plate coated with ghee and cut into pieces after it is cooled.
If you want to make it into balls let the mixture cool a little, dip your hand in oil or ghee, take little amounts and make into balls.
Let them cool and store in closed container.

Can be stored upto a month.

Tastes great.

Kichidi

Ingredients:

Basmati rice: 1 1/2 cup
Moong dhal: 1/2 cup
Oil: 3 tbsp
Cumin seeds: 1/2 tsp
Cloves: 4
Bay leaves: 2
Marati flower: 2
Ginger garlic paste: 1/2 tbsp
Turmeric pwd: 1/4 tsp
Carrot: 1 finely chopped
Potato: 1 big chopped
Tomato: 2 finely chopped
Green chillies: 2
Garam masala: 1/2 tsp
Pepper pwd: 1/2 tsp
Coriander pwd: 1/2 tsp
Salt: to taste
Water: 4 cups


Method:

Wash rice and dhal and soak them together in water for 20 minutes. Meanwhile in a pan heat oil and add cumin seeds, let them splutter and add cloves, bay leaves, marati flower and fry them for 1/2 minute(be careful not to burn the spices)
Now add onions, ginger garlic paste, green chillies, and fry them until golden brown. Add turmeric pwd, carrots, potatoes, and tomatoes combine and cook them covered for about 5 minutes.
Now add pepper pwd, coriander pwd, garam masala pwd and salt and mix well with the other ingredients.
Finally drain off all the water from the rice and moong dhal and add them to the other ingredients and mix well. Add water to the rice and adjust salt to taste.
Cover and cook until the rice is done.

This rice tastes good when it is still hot, along with curd raita.

Bhel puri

Green chutney:

Ingredients:

Cilantro: 1 small bunch
Mint: 1 small bunch
Ginger: 1 inch piece
Green chillies: 2
Lemon juice: 2 tbsps
Salt: to taste

Method:

Blend all the ingredients using little water. This chutney can be prepared in advance and refrigerated. Add water if to thick before use.

Red chutney:

Ingredients:

Seed less dates: 10
Tamarind: lime sized
Jaggery: 2 tbsps
Red chillie pwd: 1/2 tsp
Salt: to taste

Method:

Soak tamarind and jaggery in hot water and make a thick extract. Blend with dates, and use as required.


Bhel puri:

Ingredients:

Puffed rice: 2 cups
Carrot: 1 grated
Tomato: 1 finely chopped
Onion: 1 finely chopped
Cilantro: 1/2 bunch
Green chutney
Red chutney
Sev: 1/2 cup
Chat masala: 1 tbsp
Salt: to taste

Method:

Mix all the ingredients and serve before it gets soggy. Adjust green and red chutneys according to taste.

Enjoy.

Garelu

Ingredients:

Urad dhal: 2 cups
Green chillies: 4
Ginger: Small piece
Salt: to taste
Onion: 1 small chopped
Oil: To deep fry

Method:

Wash and soak urad dhal for atleast 4 hours.
Drain all the water and grind urad dhal into smooth paste along with ginger and chillies using very little water.
The batter should be thick to hold the shape.
Add salt to taste, and onion
Heat oil in a pan for deep frying.
Take a ziploc bag and wet it with little water.
Take a small ball of batter and spread it on the ziploc like a circle, make a small hole in the middle and slowly add it to the oil.
Deep fry until golden brown. Repeat until all the batter is done.

Makes around 15 garelu.

Tastes great with coconut chutney.

Eat when they are still hot.
