vegetable cutlet


Ingredients:

Cabbage : 1 cup chopped and boiled
Carrots: 1 cup grated
Potatoes: 2 big (boiled and mashed)
Cilantro: 1 bunch chopped
Bread : 4 sliced (Microwave the bread untill crisp and make into powder)
Ginger garlic paste: 1/2 tbsp
cumin seeds: 1/2 tbsp
Green chillies: 3 finely chopped
Salt: to taste
Oil: 5 tbsps
Method:

Mix all the above ingredients except bread powder and oil.
Adjust salt to taste.
Make small patties of the vegetable mixture and coat with bread.
Heat the dosa pan and spray some oil it.
Fry the patties until brown on both sides by spraying more oil as needed.

Gobble them up when they are still hot as is or with ketchup.

Chalimidi

Ingredients:

Rice : 2cups
Sugar: 1 1/2 cups
Water: 1/2 cup
Butter: 1 stick
Poppy seeds: 1/4th cup
Coconut pieces: 1/2 cup
Elachi pwd: 1/2 tsp

Method:

Soak the rice for about 2 days by changing the water every 8 hours.
Drain the water from the rice and spread the rice on a clean cloth and let the rice dry for about 1/2 hour.
Grind the rice into flour and sift the flour.
Cover the flour with the cloth used to dry the rice and keep aside.
Fry the poppy seeds without oil until golden brown and keep aside.
Fry the coconut pieces with some butter until golden brown and keep aside.
In a heavy bottomed vessel take sugar and water and keep on medium flame.
Let the sugar syrup boil until you get the consistency of a string. Takes some time keep checking frequently until you get the string consistency.
Add the poppy seeds and coconut pieces to the sugar syrup and mix well.
Add the butter stick and remove from heat.
Slowly add the flour little by little and keep stirring to avoid lumps untill all the flour is used.
If you think the mixture is not thick enough then add a little bit of rice flour from your pantry.

Let cool.

Kothimera pudina chutney

Ingredients:

Cilantro: 2 big bunches
Mint: 1 bunch
Corriander seeds: 1 tbsp
Red chillies: 4
Tamarind: Small piece
Garlic : 1 clove
Cumin seeds: 1/2 tsp
Salt: to taste
Oil: 1 tbsp

For Seasoning:

Oil: 3 tbsps
cunin seeds: 1/2 tsp
mustard seeds: 1/2 tsp
urad dhal: 1 tsp
channa dhal: 1tsp
Turmeric: 1/2 tsp
Garlic: 1 clove chopped

Method:

Clean the cliantro and mint leaves and drain the water.
Fry them in 1 tbsp oil. Also add tamarind to the leaves while frying.
Remove from heat and let cool.
In a pan fry the corriander seeds, cumin seeds and red chilles untill nice aroma without oil and let cool.
Grind the corriander seeds, cumin seeds, red chilles, garlic and salt.
Then add the fried leaves to the mixture and grind until soft.
Adjust salt to taste.

In a pan heat oil for seasoning and add the seasoning one by one according to the order in the seasonings list and fry untill the dhal and golden brown.
Now add the seasoning to the grinded mixture.

Goes well with rice.

Rava laddu


Ingredients:

Rava : 2 cups
Coconut powder : 1 1/2 cup
Sugar : 2 cups or 8 oz
Milk : 5 oz
Raisins : 1/2 cup (Iused rice cup)
Chopped dates : 1 cup (I used rice cup)
Elachi pwd : 1tbsp
Ghee or butter : 4 tbsps


Method:

Take a pan and heat ghee.
Add raisins and fry untill golden brown. Remove and keep aside.
In the ghee add rava and fry untill nice aroma.
Then add coconut pwd and fry for 3 minutes on medium heat.
Slowly add sugar and mix well with the other ingredients.
Add milk to the above mixture and mix well.
Once the mixture gets mixed well add elachi pwd, raisins and chopped dates.
Remove from heat and cool it.
Make into balls after cooled.
Makes about 20 laddus.
Store in an air tight container.
Refrigirate after 2 days.

Easy Oatmeal Muffins

Ingredients:

Milk : 2 cups
Quick cooking oats: 2 cups
Eggs: 2
Oil: 1/2 cup
All purpose flour: 2 cups
Sugar: 1/2 cup
Baking powder: 1 tbsp and 1 tsp
Salt: 1 tsp

Substitute for Egg:

Baking powder: 1 tsp
Vinegar: 1 tbsp
Water: 1 tbsp

This measurment is only for one egg if you are using more than one egg then just double the ingredients depending on the number of eggs you are using.

Mix the 3 ingredients in a seperate bowl and then add them to the other ingredients.

Note: The baking powder used in the ingredients list should also be added along with the egg substiture ingredients.


Method:

Preheat oven to 425 degress. Grease muffin cups or line with paper muffin liners.
In a small bowl, combine milk and oats; let soak for 15 minutes.
In a seperate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are 2/3 full.
Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean

Enjoy the tastey muffins.

Kalakand with ricotta cheese

Ingredients:

Ricotta cheese: 14 oz
Condensed milk: 14 oz
Elachi powder: 1/2 tsp


Method:

Mix all the ingredients in a microwave safe bowl.
Use a little bigger bowl to prevent overflowing.
Microwave for about 15 to 20 minutes depending upon the microwave.
Make sure you stir the mixture in between.
Microwave untill the mixture gets tickened.
Grease a vessel with oil and pour the mixture.
Sprinkle a little elachi pwd on top.
Let it cool and cut into pieces.
Refrigirate the remaining pieces.
